Summer Avocado, Mango and Prawn Salad Recipe

Instructions:

1. 
   1 Prepare Salad Ingredients:

   In a large bowl, combine the peeled and deveined prawns, chopped mangos, avocados, and rocket salad mix.

2. 
   2 Prepare Dressing:

   Grate the zest of one lime and juice both limes into a smaller bowl. Add olive oil, honey, salt, pepper, and chopped chilli. Whisk well to combine.

   3 Add Herbs to Dressing:

   Stir in chopped coriander and onion into the dressing mixture.

4. 
   4 Combine and Toss:

   Pour the dressing over the prawn, mango, avocado, and salad mix in the large bowl. Toss gently to ensure everything is well coated.

   5 Serve:

   Divide the salad between plates and serve immediately. Optionally, serve with a side of glass noodles or a slice of crusty whole grain bread for a complete meal.
