Herb-Crusted Coral Trout Recipe

Ingredients:
- 1 whole coral trout (about 1.5 kg), cleaned and gutted
- 2 tablespoons olive oil
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- 3 cloves garlic, minced
- Zest of 1 lemon
- Salt and pepper, to taste
- Lemon wedges, for garnish

1 Prepare the Trout
Preheat your oven to 200°C (390°F). Rinse the coral trout under cold water and pat dry with paper towels. Place the fish on a baking tray lined with parchment paper.

2 Season with Herb Crust
In a small bowl, combine chopped fresh herbs (parsley, thyme, and rosemary), minced garlic, lemon zest, and olive oil. Season with salt and pepper. Rub the herb mixture all over the trout, making sure to get it into any crevices.

Place the tray in the oven and roast the trout for about 20-25 minutes, or until the fish flakes easily with a fork and the skin is crispy.
