Smoky Mackerel Melt Sandwiches Recipe

Ingredients:
- 4 mackerel fillets, skin removed
- 100g cream cheese
- 2 tablespoons fresh dill, chopped
- Zest of 1 lemon
- Juice of 1 lemon
- 8 slices of sourdough bread
- 4 slices of cheddar cheese
- 30g butter
- Salt and pepper, to taste
Instructions:

1 Prepare the Mackerel
Preheat your grill to medium-high. Grill the mackerel fillets, skin-side down, for about 5 minutes until cooked through. Flake the fish into pieces, discarding the skin and bones.

2 Mix the Filling
Combine the flaked mackerel with cream cheese, chopped dill, lemon zest, and a squeeze of lemon juice. Season with salt and pepper to taste.

3 Assemble and Butter
Spread the mackerel mixture on half of the bread slices, top with cheddar cheese, and cover with the remaining bread slices. Butter the outside of the sandwiches.
