1 Prepare the Salsa
In a bowl, combine the finely chopped pink grapefruit segments, diced cucumber, chopped red onion, and fresh coriander. Season with salt and pepper, and add a squeeze of lime juice. Mix well and let the flavours meld while you prepare the oysters.

2 Prepare the Oysters
Shuck the oysters, ensuring they are properly cleaned and free of shell fragments. Place them on a bed of crushed ice to keep them chilled and fresh.

Spoon a small amount of the pink grapefruit salsa onto each oyster. Garnish with additional coriander leaves if desired. Serve immediately with lime wedges on the side.
