Preheat your oven to 200°C (390°F). Rinse the coral trout under cold water and pat dry with paper towels. Place the fish on a baking tray lined with parchment paper.

In a small bowl, combine chopped fresh herbs (parsley, thyme, and rosemary), minced garlic, lemon zest, and olive oil. Season with salt and pepper. Rub the herb mixture all over the trout, making sure to get it into any crevices.

Place the tray in the oven and roast the trout for about 20-25 minutes, or until the fish flakes easily with a fork and the skin is crispy.

Remove the trout from the oven and let it rest for a few minutes before serving. Garnish with extra lemon wedges and herbs if desired.
