Succulent langoustines perfectly seared to a golden finish, embraced by the tart crunch of Granny Smith apples and a hint of aromatic herbs. This dish is a celebration of flavours and textures in a modern Australian seafood feast that looks as stunning as it tastes.
Ingredients:
- 10 pieces Langoustines
- 2 medium Granny Smith apples
- 2 tablespoons Olive oil
- 3 cloves Garlic cloves, minced
- 1 tablespoon Fresh lemon juice
- 1 teaspoon Fresh thyme leaves
- 30 grams Unsalted butter
- to taste Salt
- to taste Black pepper
Instructions:
-
1 Prep the Ingredients
- Start by carefully cleaning the langoustines and patting them dry. Core and slice the Granny Smith apples into fine, matchstick pieces. Mince the garlic and pluck the thyme leaves.
-
2 Marinate the Langoustines
- In a bowl, combine the langoustines with olive oil, fresh lemon juice, minced garlic, and thyme. Season with salt and pepper to taste. Mix gently ensuring each piece is evenly coated.
-
3 Sear the Langoustines
- Heat a large skillet over medium-high heat and melt the unsalted butter. Place the marinated langoustines in the pan and sear for about 2-3 minutes on each side until they develop a golden crust.
-
4 Final Touches
- Once seared, add the apple matchsticks to the pan and toss lightly, allowing the apples to soften just slightly and absorb the flavours for about 1 minute. Remove from heat and serve immediately.
