1 Prepare the lobster and sauce
Boil the lobster for 8-10 minutes until cooked through. Remove the meat from the shell and cut into bite-sized pieces. In a small saucepan, melt butter over low heat, then add cream and chives. Stir to combine and set aside.

In a separate pan, whisk eggs with salt and pepper. Heat butter in a non-stick pan and pour in the egg mixture. Cook on medium heat until the edges set, then add the lobster pieces on one side. Fold the omelette in half.

Transfer the omelette to a plate and drizzle the chive butter sauce over the top. Garnish with extra chives if desired.
