Ingredients:

Stir in the water and bring to a simmer. Cover and cook for 10–12 minutes until the rice is partially cooked and water is absorbed.

    Once the rice mixture has cooled slightly, spoon it carefully into each calamari tube, filling about 3/4 full to leave room for expansion. Use toothpicks to secure the open ends of the calamari tubes.

    In a separate pan, heat the olive oil over medium heat and place the stuffed calamari in the pan. Sear the calamari on all sides, then add the white wine and lemon juice, cover, and cook for 20 minutes or until the calamari are tender.
