Transform a classic Italian dish into a holiday favourite with this festive cod spaghetti. Featuring the richness of cod, briny olives, and capers in a hearty tomato sauce, it’s elevated with seasonal touches like roasted red capsicum, parsley, and a sprinkling of candied lemon zest for a Christmas twist. Ingredients:

  • 400 g dried spaghetti
  • 300 g cod fillets, poached and flaked
  • 2 tbsp salt, for pasta water
  • 3 tbsp olive oil
  • 2 garlic cloves, finely chopped
  • 1 small onion, finely diced
  • 1 celery stalk, finely diced
  • 400 g canned diced tomatoes
  • 1 roasted red capsicum, chopped
  • ½ cup green olives, halved
  • 2 tbsp capers, rinsed
  • Salt and pepper, to taste
  • Fresh parsley, chopped
  • Candied lemon zest (made by simmering lemon peel with sugar and water)
  • Extra virgin olive oil

Instructions:
