Mediterranean Cod in Paper Parcels Recipe
This Mediterranean-inspired cod dish is a simple yet elegant way to enjoy fresh, flaky fish. Cooking en papillote, or in paper parcels, locks in all the delicious flavours and aromas of the herbs, lemon, and vibrant vegetables. Ingredients:
- 4 x 150 g cod fillets
- 1 medium zucchini, thinly sliced
- 250 g cherry tomatoes, halved
- 1/2 cup pitted Kalamata olives
- 1/2 red onion, thinly sliced
- 4 tbsp olive oil
- 1 tsp sea salt
- 1/2 tsp cracked black pepper
- 1/2 tsp smoked paprika
- 4 sprigs fresh thyme
- 4 slices lemon

1 Prepare the parcels
Preheat the oven to 200°C (180°C fan-forced). Cut four large sheets of baking paper. In the centre of each sheet, layer zucchini slices, cherry tomatoes, olives, and red onion. Top with a cod fillet, drizzle with olive oil, and season with sea salt, cracked pepper, and a pinch of smoked paprika. Add a sprig of thyme and a slice of lemon on each fillet.

2 Seal and bake
Fold the edges of the baking paper together to seal the parcels tightly. Place the parcels on a baking tray and bake for 12–15 minutes, or until the fish is cooked through and flakes easily with a fork.

Transfer each parcel to a plate, allowing guests to unwrap their meal at the table for a dramatic presentation. Pair with warm crusty bread or a side of herbed couscous for a complete Mediterranean experience.
