Instructions:

1 Prepare the Fish
Season barramundi fillets with salt and pepper. Heat olive oil in a skillet and pan-fry the fillets for about 3-4 minutes on each side until golden and cooked through.

2 Simmer the Sauce
After removing the fish, add minced garlic to the same skillet and sauté for 1 minute until fragrant. Add diced tomatoes and sliced black olives, and simmer for about 10 minutes until the sauce thickens.

3 Combine and Serve
Return the barramundi to the skillet, spooning the sauce over the fillets. Let everything simmer together for an additional 5 minutes to allow the flavours to meld. Garnish with chopped parsley and serve immediately.
