Berry Infused Tilapia Delight
A vibrant dish featuring tender tilapia fillets complemented by a tangy raspberry glaze, balanced with a hint of lemon and a subtle spice. The colours and flavours blend to create a refreshing meal that's both light and satisfying.
Ingredients:
- 4 fillets Tilapia fillets
- 2 tablespoons Olive oil
- 1/2 teaspoon Sea salt
- 1/4 teaspoon Ground black pepper
- 150 grams Fresh raspberries
- 1 tablespoon Granulated sugar
- 1 tablespoon Fresh lemon juice
- 1/4 teaspoon Crushed red pepper flakes
- 1 clove Minced garlic
Instructions:

1 Prepare the Oven and Tray
- Set your oven to 200°C and prepare a baking tray by lightly greasing it or lining it with parchment paper.

2 Season the Tilapia
- Pat the tilapia fillets dry with a paper towel. Brush each fillet with olive oil and season evenly with sea salt, ground black pepper, and minced garlic.

3 Bake the Fish
- Arrange the seasoned fillets on the prepared tray and bake in the preheated oven for 12 to 15 minutes until the fish flakes easily when tested with a fork.

4 Prepare the Raspberry Sauce
- In a small saucepan, combine the fresh raspberries, granulated sugar, lemon juice, and crushed red pepper flakes. Warm the mixture over medium heat, gently mashing the raspberries with a fork to create a chunky sauce, and simmer for 3 to 4 minutes.

5 Assemble and Serve
- Remove the tilapia from the oven and drizzle the warm raspberry sauce generously over the fillets. Serve immediately, adding a garnish of extra raspberries or a fresh herb sprig if desired.
