  Ingredients:
- 4 片蓝眼鲹鱼片
 - 1 杯新鲜芫荽叶
 - 2 瓣大蒜
 - 1 个红辣椒,切碎
 - 1 个青柠皮
 - 1 个青柠汁
 - 橄榄油,用于烹饪
 - 盐和胡椒,调味
 - 少许糖

                          1 Prepare the Coriander PasteIn a food processor, blend fresh coriander, garlic, red chilli, lime zest, and a splash of olive oil until a smooth paste forms. Season the blue-eye trevalla fillets with salt and pepper, then evenly coat them with the coriander paste.

                          2 Pan-Fry the FishHeat a large non-stick pan over medium-high heat and add a drizzle of olive oil. Once hot, add the blue-eye trevalla fillets and cook for 3-4 minutes on each side until the fish is cooked through and the coriander crust is lightly crispy.

                          3 Make the Chilli Lime Sauce and ServeIn a small bowl, mix lime juice, finely chopped red chilli, and a pinch of sugar until the sugar dissolves. Drizzle the chilli lime sauce over the cooked fillets and serve immediately with steamed rice or a fresh salad.
