In a large mixing bowl, combine the tuna, breadcrumbs, egg, onion, parsley, lemon zest, salt, and pepper. Mix thoroughly until the ingredients are evenly incorporated and the mixture holds together when pressed.

Shape the mixture into small, round patties. Heat olive oil in a large frying pan over medium heat. Add the patties and cook for about 3-4 minutes on each side or until golden brown and crispy.

Transfer the cooked patties to a paper towel to remove excess oil. Serve warm with a squeeze of fresh lemon juice and garnish with extra parsley.
