Gingered Apple Fish Fillets
A delightful dish where crisp apple slices and freshly grated ginger complement tender fish fillets. The tangy lemon and mellow honey create a balance of flavours, accented by aromatic herbs and a light caramelisation that elevates this recipe into a refreshing yet hearty meal.
Ingredients:
- 4 fillets White fish fillets
- 1 medium Apple
- 15 g Fresh ginger
- 30 ml Lemon juice
- 20 ml Honey
- 30 ml Olive oil
- 1 tsp Salt
- 0.5 tsp Black pepper
- 10 g Fresh coriander

1 Prepare Ingredients
- Wash and core the apple before thinly slicing it. Finely grate the fresh ginger. Lightly score the fish fillets to help the marinade seep into the meat.

2 Marinate
- Combine lemon juice, honey, olive oil, grated ginger, salt and pepper in a bowl. Place the fish fillets and apple slices in the mixture. Cover the bowl and allow the ingredients to marinate in the fridge for about 20 minutes.

3 Cook the Fish
- Heat a non-stick frying pan over medium heat. Place the marinated fish fillets in the pan and cook for 3-4 minutes on each side until the fish is golden and thoroughly cooked. Add the apple slices during the final 2 minutes to achieve a light caramelisation.

- Arrange the fish fillets on a serving plate and sprinkle freshly chopped coriander over the top. Serve while hot with a crisp salad or steamed vegetables for a balanced meal.
