Grilled Seafood Medley with Garlic Herb Marinade
A delightful mix of fresh seafood marinated in a zesty blend of lemon, garlic, and herbs, then grilled to perfection. The dish offers a balanced blend of flavours with a subtle char and a burst of citrus, making it an enticing option for any seafood lover.
Ingredients:
- 200 g King Prawns, peeled
- 200 g White Fish Fillet, cut into chunks
- 200 g Scallops
- 60 ml Extra Virgin Olive Oil
- 3 cloves Garlic Cloves, minced
- 30 ml Lemon Juice
- 1 tsp Lemon Zest
- 10 g Fresh Parsley, chopped
- 5 g Salt
- 1 g Black Pepper
Instructions:

1 Marinade Mixture
- Combine the olive oil, minced garlic, lemon juice, lemon zest, chopped parsley, salt and black pepper in a bowl. Whisk until the mixture is smooth and fragrant.

2 Seafood Preparation
- Place the king prawns, white fish chunks and scallops into a shallow dish. Pour the marinade over the seafood and gently mix until all pieces are evenly coated. Allow the mixture to rest for 10-15 minutes.

3 Preheat the Grill
- Set your grill or barbeque to a medium-high heat and lightly oil the grates to prevent any sticking during cooking.

4 Grilling Process
- Arrange the seafood on skewers or directly on the grill. Cook for approximately 3-4 minutes on each side until a subtle char forms and the seafood is thoroughly cooked.

- Transfer the grilled seafood to a serving platter. Garnish with extra parsley or a few lemon slices if preferred. Serve immediately while hot.
