Preheat oven to 200°C. Boil baby potatoes for 10 minutes until tender. Drain and halve them.

Heat olive oil in an oven-safe skillet over medium heat. Sauté onion, capsicum, and cherry tomatoes for 5 minutes until softened.

Whisk eggs and milk in a bowl. Pour over the veggies in the skillet. Add flaked tuna fillet, cooked potatoes, and olives, spreading evenly.

Bake in the oven for 15-20 minutes until the frittata is set and golden. Let cool slightly before slicing and serving.
