Crispy Fish Burgers with Herb Aioli Recipe
These crispy fish burgers are a delightful twist on a classic favourite, featuring golden fried fish fillets paired with a zesty herb aioli and fresh toppings. Perfect for a casual lunch or dinner, these burgers are sure to impress with their balance of crunch and flavour.
Ingredients:
- 4 white fish fillets (such as cod or barramundi)
- Salt and pepper, to season
- 1/2 cup plain flour
- 2 eggs, whisked
- 1 cup breadcrumbs
- 1/2 cup mayonnaise
- 1 tbsp fresh parsley, finely chopped
- 1 tbsp fresh dill, finely chopped
- Zest of 1 lemon
- Juice of 1/2 lemon
- 4 burger buns
- Lettuce leaves
- 1 tomato, sliced
- Vegetable oil, for frying

1 Prepare the Fish and Aioli
Season the fish fillets with salt and pepper, then dredge in flour, dip in whisked egg, and coat with breadcrumbs. Set aside. In a small bowl, combine mayonnaise, finely chopped fresh herbs (parsley and dill), lemon zest, and a squeeze of lemon juice for the herb aioli.

2 Cook the Fish
Heat oil in a large frying pan over medium-high heat. Fry the fish fillets for 3-4 minutes on each side or until golden brown and cooked through. Transfer to a plate lined with paper towels to drain excess oil.

Toast the burger buns, then spread the herb aioli on the base of each bun. Add a layer of fresh lettuce, a slice of tomato, and a crispy fish fillet. Top with the other half of the bun and serve immediately.
