Spicy Mango Scallops with Festive Cranberry Drizzle Recipe
This elegant and vibrant dish combines tender seared scallops with a spicy-sweet mango sauce and a festive cranberry drizzle. Perfect for Christmas celebrations, this recipe brings tropical flair to your holiday table with a sophisticated balance of flavours and a joyful pop of colour.
Ingredients:
- 500 g fresh scallops, cleaned and patted dry
- 1 tbsp olive oil
- 1 tbsp unsalted butter
- Salt and cracked black pepper, to taste
- 1 cup mango purée (fresh or canned)
- 1 tbsp honey
- 1 tsp chilli flakes (adjust to taste)
- Juice of 1 lime
- 1 cup fresh cranberries
- ½ cup fresh orange juice
- 1 tbsp honey
- Pomegranate seeds
- Fresh coriander leaves
- Lime zest
Instructions:

1 Prepare the cranberry drizzle
In a small saucepan, simmer fresh cranberries, orange juice, and 1 tbsp honey over medium heat until the cranberries burst and the sauce thickens slightly (about 5 minutes). Strain and set aside.

2 Prepare the mango sauce:
For the mango sauce, blend mango purée, chilli flakes, lime juice, and 1 tbsp honey in a bowl until smooth. Adjust seasoning with a pinch of salt.

3 Sear the scallops
Pat the scallops dry with paper towels and season with salt and pepper. Heat olive oil and butter in a large frying pan over medium-high heat. Sear scallops for 1-2 minutes per side until golden and caramelised.

Arrange the scallops on a serving platter. Drizzle with mango sauce and festive cranberry drizzle. Garnish with fresh coriander leaves, pomegranate seeds, and a light sprinkle of lime zest for a beautiful Christmas touch.
