1 Prepare the sauce
In a large saucepan, heat a drizzle of oil over medium heat. Add minced garlic and sauté until fragrant. Stir in diced tomatoes, vegetable stock, and a pinch of salt and pepper. Bring to a simmer and cook for 10 minutes until the tomatoes break down.

2 Cook the barramundi
Season the barramundi fillets with salt and pepper. Place them into the simmering tomato sauce and poach for 6-8 minutes, or until the fish is cooked through and flakes easily.

3 Serve the noodles
While the fish cooks, prepare the noodles according to package instructions. Drain and divide them into bowls. Top with the poached barramundi and tomato sauce. Garnish with fresh basil or parsley and a squeeze of lime juice.
