Pan-Seared Salmon with Blueberry Drizzle
A modern twist on a classic dish, this pan-seared salmon is paired with a vibrant blueberry drizzle that melds the natural sweetness of berries with a hint of zesty lemon. The balance of succulent fish and tangy sauce creates a stunning, flavourful meal perfect for a light yet satisfying dinner.
Ingredients:
- 4 fillets Salmon fillets
- 1 teaspoon Salt
- 0.5 teaspoon Black pepper
- 2 tablespoons Olive oil
- 200 grams Fresh blueberries
- 1 tablespoon Honey
- 2 tablespoons Lemon juice
- 1 teaspoon Lemon zest
- 1 clove Garlic clove, minced
- 1 tablespoon Fresh dill, chopped
Instructions:

1 Season the Salmon
- Pat the salmon fillets dry and lightly season with salt and black pepper. Allow them to sit at room temperature for 10 minutes to absorb the flavours.

2 Prepare the Blueberry Drizzle
- In a small saucepan, combine the fresh blueberries, honey, lemon juice, lemon zest and minced garlic. Gently simmer on low heat for about 5 minutes until the berries begin to break down and the sauce slightly thickens.

3 Sear the Salmon
- Heat the olive oil in a large non-stick frying pan over medium-high heat. Place the salmon fillets skin side down and cook for 4 minutes until a crisp layer forms. Flip the fillets and cook for a further 3-4 minutes, or until the salmon is cooked to your liking.

4 Plate and Garnish
- Transfer the seared salmon onto plates and spoon a generous amount of the blueberry drizzle over the top. Scatter chopped fresh dill to finish the dish.

- Serve immediately alongside steamed vegetables or a light salad to complete this balanced meal.
