A modern twist on a classic dish, this pan-seared salmon is paired with a vibrant blueberry drizzle that melds the natural sweetness of berries with a hint of zesty lemon. The balance of succulent fish and tangy sauce creates a stunning, flavourful meal perfect for a light yet satisfying dinner.

Ingredients:

  • 4 fillets Salmon fillets
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 200 grams Fresh blueberries
  • 1 tablespoon Honey
  • 2 tablespoons Lemon juice
  • 1 teaspoon Lemon zest
  • 1 clove Garlic clove, minced
  • 1 tablespoon Fresh dill, chopped

Instructions:

    • Pat the salmon fillets dry and lightly season with salt and black pepper. Allow them to sit at room temperature for 10 minutes to absorb the flavours.

    • Heat the olive oil in a large non-stick frying pan over medium-high heat. Place the salmon fillets skin side down and cook for 4 minutes until a crisp layer forms. Flip the fillets and cook for a further 3-4 minutes, or until the salmon is cooked to your liking.
