Australia Day Grilled Seafood Platter with Lemon-Garlic Butter Recipe

Ingredients:
- 400 g barramundi fillets
- 300 g large prawns, peeled and deveined
- 200 g scallops
- 2 tbsp olive oil
- 2 garlic cloves, minced
- Zest and juice of 1 lemon
- 2 tbsp fresh parsley, chopped
- Salt and freshly ground black pepper, to taste
- 3 tbsp unsalted butter
