Fiery Taiwanese Pipis Recipe
Fiery Taiwanese Pipis is a mouth-watering seafood dish that brings together the fresh taste of pipis with bold, aromatic spices. Ingredients:
- 1kg pipis
- 2 tablespoons vegetable oil
- 4 garlic cloves, minced
- 1 tablespoon fresh ginger, minced
- 2 red chillies, sliced
- 2 tablespoons fermented black beans, rinsed and chopped
- 1/4 cup rice wine
- 2 tablespoons soy sauce
- 2 spring onions, sliced
- Fresh coriander, for garnish
Instructions:

1 Prepare the Pipis
Soak the pipis in cold water for at least 30 minutes to remove any sand. Drain and rinse thoroughly.

2 Cook the Aromatics and Pipis
Heat vegetable oil in a large wok or frying pan over medium-high heat. Add garlic, ginger, and red chilli, stirring until fragrant. Add black beans and cook for another minute. Add pipis, stirring to coat. Pour in rice wine and soy sauce, cover, and cook for 5-7 minutes until the pipis have opened. Discard any that remain closed.

Transfer the cooked pipis to a serving dish, pouring the sauce over the top. Garnish with spring onions and fresh coriander. Serve immediately with steamed rice.
