Baked Barramundi with Herbed Breadcrumb Topping Recipe
Fancy a fish dish with a crunch? This Baked Barramundi is topped with a herby breadcrumb mix that's crispy on the outside and packed with flavour. The tender fish underneath makes for a winning combo that's perfect for any night of the week!
Ingredients:
- 4 barramundi fillets
- 1 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 tbsp fresh herbs (parsley, thyme, dill), chopped
- 1/2 tsp garlic powder
- Salt and pepper, to taste
- 1/4 cup unsalted butter, melted
- Lemon wedges and additional herbs, for garnish
Instructions:

1 Prepare the Barramundi
Preheat your oven to 190°C. Place barramundi fillets in a baking dish lined with baking paper.

2 Make the Breadcrumb Topping
In a bowl, combine breadcrumbs, grated Parmesan cheese, chopped fresh herbs (such as parsley, thyme, and dill), garlic powder, salt, and pepper. Drizzle with melted butter and toss until well combined.

Spread the breadcrumb mixture evenly over the barramundi fillets, pressing gently to adhere. Bake for 12-15 minutes, or until the barramundi is cooked through and the topping is golden brown and crispy.
