Citrus Prawn Ceviche with Fresh Coriander Recipe

Ingredients:
- 500g raw prawns, diced
- 3/4 cup fresh lime juice (about 5-6 limes)
- 1 large tomato, diced
- 1 small red onion, finely diced
- 1 avocado, diced
- 1 garlic clove, minced
- 1 small jalapeño, finely chopped
- 1/4 cup fresh coriander, chopped
- Salt and pepper, to taste
- Lime wedges, for serving
Instructions:

1 Marinate the prawns
Dice raw prawns and cover them in lime juice. Refrigerate for 30-45 minutes until the prawns turn pink and opaque.

Dice tomatoes, onion, and avocado, and finely chop garlic, jalapeño, and coriander. Drain most of the lime juice from the prawns, leaving a bit for moisture, then mix in the vegetables and season with salt and pepper.
