Kid-Friendly Salmon Fried Rice Recipe

Ingredients:
- 2 salmon fillets
- 2 cups cooked rice (preferably day-old)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup frozen peas
- 1 carrot, diced
- 2 shallots, sliced
- 2 eggs
- 2 tbsp olive oil
- 2 tbsp soy sauce
- 1 tsp sesame oil
- Salt and pepper, to taste
- Fresh parsley or cilantro, chopped (for garnish)
- Lemon or lime wedges (optional, for serving)
Instructions:

1 Prepare the Salmon
Start by heating olive oil in a large frying pan over medium-high heat. Cook salmon fillets, skin side down, for 3-4 minutes until crispy. Flip and cook for another 2-3 minutes until fully cooked. Remove from pan, flake into pieces, and set aside.

2 Cook the Rice
In the same pan, add more olive oil if needed. Sauté diced onion and minced garlic until fragrant. Add cooked rice, breaking up clumps, and cook for 3-4 minutes until heated through and slightly crispy.

Push rice to one side of the pan. Crack eggs into the empty side and scramble until cooked. Add frozen peas, diced carrots, and sliced shallots. Stir-fry for 2-3 minutes until vegetables are tender-crisp.

Return flaked salmon to the pan. Stir in soy sauce, sesame oil, and season with salt and pepper to taste. Cook for another 2 minutes until heated through.
