This Mediterranean-inspired squid and rice dish brings together the rich flavours of the sea with a comforting mix of rice and spices. Ingredients:

  • 500g squid, cleaned and sliced into rings
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red capsicum, diced
  • 1 tsp paprika
  • 1 tomato, chopped
  • 1 1/2 cups short-grain rice (like Arborio)
  • 4 cups fish stock
  • 1/4 tsp saffron threads
  • 1 bay leaf
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
