Ingredients:
- 500g fresh mussels, scrubbed and cleaned
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1 shallot, finely chopped
- 1-inch ginger, sliced
- 1 red chilli, sliced
- 1/3 cup dry white wine
- 1 tbsp fish sauce
- Fresh coriander, chopped, for garnish
- Lime wedges, for serving
Instructions:
-
1 Prepare the Mussels
In a large bowl, soak the mussels in cold water for about 10 minutes, scrubbing off any grit and discarding any that are open. Rinse thoroughly and set aside.
-
2 Create the Aromatic Base
In a large, deep skillet, heat olive oil over medium heat. Add garlic, shallots, ginger, and chillies, cooking until fragrant, about 2-3 minutes.
-
3 Sauté Mussels with Herbs
Add the cleaned mussels to the skillet, stirring to coat in the aromatic base. Pour in the white wine and fish sauce, cover the skillet, and cook for 5-7 minutes, or until the mussels open up. Discard any that remain closed.
