Mediterranean-Style Stuffed Calamari with Herbs and Rice Recipe
This Mediterranean-inspired stuffed calamari brings the flavours of the sea to your table, filled with a savoury mix of rice, fresh herbs, and a hint of lemon. Ingredients:
- 8 large calamari tubes, cleaned
- 1/2 cup rice
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup chopped tomatoes
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh dill, chopped
- Salt and pepper, to taste
- 1/2 cup water
- 2 tbsp olive oil
- 1/4 cup white wine
- Juice of 1/2 lemon
- Lemon wedges, for garnish

1 Prepare the Filling
In a large skillet over medium heat, sauté the onions and garlic in olive oil until softened. Add the rice, stirring to coat, then add chopped tomatoes, parsley, dill, salt, and pepper. Stir in the water and bring to a simmer. Cover and cook for 10–12 minutes until the rice is partially cooked and water is absorbed.

2 Stuff the Calamari and Secure
Once the rice mixture has cooled slightly, spoon it carefully into each calamari tube, filling about 3/4 full to leave room for expansion. Use toothpicks to secure the open ends of the calamari tubes.

3 Cook and Serve
In a separate pan, heat the olive oil over medium heat and place the stuffed calamari in the pan. Sear the calamari on all sides, then add the white wine and lemon juice, cover, and cook for 20 minutes or until the calamari are tender. Serve warm, garnished with lemon wedges and additional herbs.
