Spicy and Sour Squid Soup with Noodles Recipe
Have you ever craved a dish that’s both spicy and refreshing? This squid noodle soup is just the ticket. Tender squid swims in a zesty broth that’s packed with flavour. A touch of lime juice adds a bright, citrusy note, while fresh herbs provide a fragrant finish. The noodles soak up the broth, making every spoonful a delicious adventure.
Ingredients:
- 500g squid, cleaned and sliced
- 1.5 litres chicken stock
- 2 stalks lemongrass, bruised
- 3 cm piece ginger, sliced
- 3 garlic cloves, smashed
- 2-3 red chillies, sliced
- 2 tablespoons fish sauce
- Juice of 2 limes
- 1 teaspoon sugar
- 200g rice noodles
- Fresh coriander, for garnish
Instructions:

1 Prepare the broth
In a large pot, simmer the chicken stock with lemongrass, ginger, garlic, and red chillies for 10 minutes, then strain the broth.

2 Add the squid and noodles
Return the broth to the pot and add the squid, lime juice, fish sauce, sugar, and rice noodles. Simmer for 3-5 minutes until the squid is cooked and noodles are tender.

Garnish with fresh coriander and serve hot.
