Ingredients:
- 1 whole ocean jacket, cleaned
- Salt for seasoning
- 2 tbsp fresh ginger, grated
- Juice of 2 limes
- 3 tbsp soy sauce
- 2 tbsp honey
- 2 cloves garlic, minced
- Spring onions, sliced for garnish
- Sesame seeds, for garnish

Clean and score the ocean jacket, then season lightly with salt inside and out.
