Start by boiling water with lemongrass, lime leaves, and galangal to infuse their flavours.

2 Add Aromatics and Seafood
Incorporate minced garlic and Thai bird chilies, then add the mixed seafood. Cook until the seafood is just done, about 7 minutes.

3 Finish with Coconut and Seasonings
Stir in coconut milk, fish sauce, soy sauce, lime juice, and sugar, and simmer everything together for an additional 3 minutes to blend the flavours.

4 Garnish and Serve
Serve the soup garnished with freshly chopped cilantro, tomato slices, and optional baby bok choy. Enhance with a few drops of chili sauce for extra spice.
