This decadent pasta dish combines succulent lobster meat with a rich, buttery sauce and the natural sweetness of cherry tomatoes. Balanced with fresh herbs and a hint of lemon, it’s an elegant yet straightforward meal, perfect for any occasion.
Ingredients:
- 400g fettuccine or linguine, cooked al dente
- 2 lobster tails, chopped into pieces
- 1 cup cherry tomatoes, halved
- 4 tbsp unsalted butter
- 2 tbsp olive oil
- 3 cloves garlic, finely chopped
- 1/2 tsp chilli flakes (adjust to taste)
- 1 tbsp lemon juice
- Salt and pepper, to taste
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh basil, chopped
Instructions:
-
1 Prepare the Lobster and Tomatoes
In a large pan over medium heat, melt half of the butter with olive oil. Sauté the garlic until fragrant, about 1 minute. Add cherry tomatoes and cook until softened and slightly blistered, about 4–5 minutes. Set aside the tomatoes.
-
2 Cook the Lobster
Add the lobster pieces to the pan with the remaining butter. Season with salt, pepper, and chilli flakes. Cook the lobster for about 3–4 minutes, until just opaque and tender, then squeeze over the lemon juice.
-
3 Combine with Pasta and Serve
Toss the cooked pasta with the lobster and tomatoes, coating evenly. Stir in parsley and basil, then season with additional salt and pepper if needed. Serve hot, garnished with extra herbs.
