Classic Prawn and Mussel Cioppino Recipe
Our Classic Prawn and Mussel Cioppino features plump prawns and mussels simmering in a flavoursome tomato broth. We've infused it with fragrant herbs and a touch of wine for an extra depth of flavour. It's a classic dish that never disappoints!
Ingredients:
- 2 tbsp olive oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 800g crushed tomatoes
- 500ml chicken stock
- 250ml white wine
- 2 bay leaves
- 1 tsp dried oregano
- 500g prawns, peeled and deveined
- 500g mussels, cleaned and debearded
- Fresh parsley, chopped
- Salt and pepper, to taste
Instructions:

1 Sauté Aromatics
Heat olive oil in a large pot and sauté onions and garlic until onions are translucent, about 5 minutes.

2 Add Tomatoes and Seasonings
Stir in crushed tomatoes, chicken stock, white wine, bay leaves, and oregano. Bring to a simmer and cook for 10 minutes to develop the flavours.

3 Incorporate Seafood
Add cleaned prawns and mussels. Cover and cook until mussels have opened and prawns are pink and opaque, about 5-7 minutes.

4 Final Touches
Discard any unopened mussels. Stir in chopped parsley and season with salt and pepper to taste before serving.
