Golden Prawn and Snapper Potato Pie Recipe
This comforting snapper and prawn pie, topped with creamy mashed potatoes, is a classic family meal. The flavours of seafood blend perfectly with the smooth, buttery potato, making it a perfect dish for cosy nights in.
Ingredients:
- 500g snapper fillets, diced
- 250g prawns, peeled and deveined
- 1 onion, finely chopped
- 1 carrot, diced
- 2 celery sticks, chopped
- 3 tbsp butter
- 2 tbsp plain flour
- 2 cups milk
- 1kg potatoes, peeled and chopped
- ¼ cup cream
- Salt and pepper to taste
- Fresh parsley, chopped

1 Prepare the Filling
In a large pan, melt butter and sauté onions, celery, and carrots until softened. Add flour, then stir in milk, creating a thick sauce. Add diced snapper and prawns, along with herbs and seasoning. Simmer for a few minutes, then transfer to a baking dish.

2 Top with Potatoes
Boil potatoes until tender, then mash with butter and cream until smooth. Spoon or pipe the mashed potatoes evenly over the seafood mixture.

Preheat the oven to 180°C. Bake the pie until golden and bubbly, about 25-30 minutes. Serve hot.
