Kingfish Crudo with Pink Grapefruit and Lime Dressing Recipe
This Kingfish Crudo is a light and elegant dish that highlights the fresh, delicate flavour of kingfish, balanced by the zesty and tangy notes of pink grapefruit and lime. It’s perfect as an appetiser or light lunch, especially when you're looking to impress guests with minimal effort.
Ingredients:
- 400g fresh kingfish fillet, skin removed
- 1 pink grapefruit, segmented
- 2 tbsp fresh lime juice
- 2 tbsp pink grapefruit juice
- 2 tbsp extra virgin olive oil
- 1 small red chilli, thinly sliced
- Fresh coriander leaves, for garnish
- Salt, to taste
- Lime wedges, for serving
