Prosperity Salmon Yu Sheng Salad Recipe

Ingredients:
- 300 g fresh salmon fillet, sliced sashimi-style
- 1 carrot, julienned
- 1 daikon radish, julienned
- 1 cucumber, julienned
- 1 red capsicum, julienned
- 1 cup shredded lettuce
- 1 cup pomelo or mandarin segments
- 2 tbsp crushed peanuts
- 1 tbsp toasted sesame seeds
- 1/2 cup crispy wonton strips
- 1/4 cup fresh coriander leaves
- 3 tbsp plum sauce
- 1 tbsp lime juice
- 1 tsp sesame oil
- Pinch of white pepper

Slice the salmon fillet into thin sashimi-style pieces and chill in the refrigerator. Julienne the carrot, radish, cucumber, and capsicum into thin strips. Arrange these vegetables on a large platter alongside the shredded lettuce and coriander.
