Mediterranean Mackerel Pasta with Fresh Herbs Recipe

Ingredients:
- 250g pasta (your choice)
- 300g mackerel fillets, cut into chunks
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1 tsp chilli flakes
- 250g cherry tomatoes, halved
- 2 tbsp capers
- 1/4 cup pitted olives, sliced
- Juice of 1 lemon
- 1/4 cup fresh parsley, chopped
- Salt and pepper, to taste
Instructions:

1 Cook the pasta
Boil your chosen pasta until al dente. Drain, reserving a bit of pasta water.

In a large pan, sauté minced garlic and chilli flakes in olive oil. Add the cherry tomatoes and cook until softened. Add chunks of mackerel, capers, and olives, stirring gently to combine.
