Refreshing Mediterranean Salmon Soup Recipe
Our Refreshing Mediterranean Salmon Soup is a light and brothy delight. Tender chunks of salmon mingle with crisp vegetables, all brought together with a delicate hint of citrus. It's the perfect, healthy choice for a satisfying meal.
Ingredients:
- 2 tbsp extra virgin olive oil
- 4 green onions, chopped
- ½ green bell pepper, chopped
- 4 garlic cloves, minced
- 1 oz fresh dill, divided
- 5 cups low-sodium chicken broth
- 1 lb gold potatoes, thinly sliced
- 1 carrot, thinly sliced
- 1 tsp dry oregano
- ¾ tsp ground coriander
- ½ tsp ground cumin
- 1 lb salmon fillet, skinless, cut into chunks
- Zest and juice of 1 lemon
Instructions:

1 Sauté Aromatics
In a large pot, heat olive oil and sauté green onions, bell pepper, garlic, and half of the dill until fragrant.

2 Simmer Vegetables and Spices
Add chicken broth along with thinly sliced potatoes and carrots. Season with oregano, coriander, and cumin, and cook until the vegetables are tender.

Season salmon chunks with salt and gently simmer in the broth until cooked through, about 3-5 minutes.

Stir in the lemon zest, lemon juice, and remaining dill. Serve immediately.
