Savoury Basa Fish Soup Recipe

This isn't your ordinary soup! We've infused it with fragrant Italian herbs and a touch of white wine, creating a taste sensation that's both simple and sophisticated.   • 500g basa fillets, cut into chunks
  • 2 tbsp olive oil
  • 2-3 cloves of garlic, chopped
  • Hot pepper flakes, to taste
  • ¼ cup dry white wine
  • ¾ cup tomato passata
  • 1¼ - 1½ cups water
  • Salt, to taste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ¼ cup fresh Italian parsley, chopped
  • 4 thick slices of Italian crust bread

    Heat olive oil in a large pot, add chopped garlic and a pinch of hot pepper flakes, sautéing briefly to release the flavours.
