Savoury Basa Fish Soup Recipe

This isn't your ordinary soup! We've infused it with fragrant Italian herbs and a touch of white wine, creating a taste sensation that's both simple and sophisticated. Ingredients:
- 500g basa fillets, cut into chunks
- 2 tbsp olive oil
- 2-3 cloves of garlic, chopped
- Hot pepper flakes, to taste
- ¼ cup dry white wine
- ¾ cup tomato passata
- 1¼ - 1½ cups water
- Salt, to taste
- 1 tsp dried oregano
- 1 tsp dried basil
- ¼ cup fresh Italian parsley, chopped
- 4 thick slices of Italian crust bread

1 Prepare the Ingredients
Heat olive oil in a large pot, add chopped garlic and a pinch of hot pepper flakes, sautéing briefly to release the flavours.

Add basa fillets cut into chunks and sauté for about one minute, then pour in dry white wine and let it simmer for a few minutes until slightly reduced.

Stir in tomato passata, water, oregano, and basil, and bring to a boil. Reduce to a simmer and cook for about 30 minutes until the fish is tender and the soup thickens slightly.
