Zesty Jellyfish Salad Recipe

Ingredients:
- 200g salted jellyfish
- 1 cucumber, julienned
- 1 carrot, julienned
- 1 small red onion, thinly sliced
- 2 tablespoons rice vinegar
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon sugar
- 1 teaspoon chilli flakes
- 1 garlic clove, minced
- 1 teaspoon fresh ginger, minced
- Toasted sesame seeds, for garnish
- Fresh coriander, for garnish
Instructions:

1 Prepare the Jellyfish and Vegetables
Rinse the jellyfish under cold water and soak in a bowl of water for 30 minutes to remove excess salt. Drain and slice into thin strips. Julienne the cucumber and carrot, and thinly slice the red onion.

2 Make the Dressing
In a bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, and chilli flakes until the sugar is dissolved. Add the minced garlic and ginger, mixing well.

3 Assemble the Salad
In a large bowl, combine the jellyfish, cucumber, carrot, and red onion. Pour the dressing over the salad and toss to coat evenly. Garnish with toasted sesame seeds and fresh coriander. Serve immediately.
