Ingredients:

  • ウニの卵 150g
  • スパゲッティ 400g
  • オリーブオイル60ml
  • ニンニク3片(みじん切り)
  • 赤唐辛子1本(種を取り除いて細かく刻む)
  • 辛口白ワイン100ml
  • 15g 新鮮なパセリ(粗みじん切り)
  • レモンの皮小さじ1杯
  • 塩を味わう
  • 黒コショウ

    • Gather all ingredients. Mince the garlic, chop the red chilli, and roughly chop the fresh parsley. Zest the lemon and set aside the sea urchin roe in a bowl.

    • Fill a large pot with water, add a generous pinch of salt, and bring to a boil. Add the spaghetti and cook until it is al dente. Reserve a cup of the pasta water before draining.
