Coastal Sea Urchin Pasta
A refined pasta dish celebrating the ocean's bounty, where the creamy texture of sea urchin meets a gentle kick of chilli and garlic. The vibrant notes of fresh parsley and lemon zest create a dish that is both elegant and comforting, evoking the charm of a seaside meal.
Ingredients:
- 150 g Sea urchin roe
- 400 g Spaghetti
- 60 ml Olive oil
- 3 cloves Garlic cloves, minced
- 1 each Red chilli, deseeded and finely chopped
- 100 ml Dry white wine
- 15 g Fresh parsley, roughly chopped
- 1 tsp Lemon zest
- to taste Salt
- to taste Black pepper
Instructions:

1 Prepare the Ingredients
- Gather all ingredients. Mince the garlic, chop the red chilli, and roughly chop the fresh parsley. Zest the lemon and set aside the sea urchin roe in a bowl.

2 Cook the Pasta
- Fill a large pot with water, add a generous pinch of salt, and bring to a boil. Add the spaghetti and cook until it is al dente. Reserve a cup of the pasta water before draining.

3 Infuse the Flavours
- While the pasta is cooking, heat the olive oil in a large frying pan over medium heat. Add the minced garlic and chopped chilli, cooking gently until the garlic softens and becomes fragrant.

4 Create the Sauce
- Pour in the dry white wine to deglaze the pan. Allow it to reduce slightly before adding the sea urchin roe. Stir carefully so the roe warms without breaking down completely.

5 Combine Pasta and Sauce
- Add the drained spaghetti into the pan along with a little of the reserved pasta water. Toss thoroughly to ensure the noodles are evenly coated in the silky sauce.

6 Finish and Serve
- Sprinkle in the fresh parsley and lemon zest. Season with salt and freshly ground black pepper as required. Serve immediately, ensuring every serving gets a generous share of the sea urchin.
