A vibrant, modern twist on a coastal classic. Delicate fish fillets are pan-seared to perfection and crowned with a tangy strawberry salsa that bursts with fresh, summery flavours. Ingredients:

  • 600 g Fish fillets
  • 30 mL Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 200 g Strawberries (diced)
  • 1 small Red onion (finely chopped)
  • 1 small Red chilli (deseeded and finely diced)
  • 30 mL Lime juice
  • 2 tablespoons Fresh mint (chopped)

Instructions:

    • Pat the fish fillets dry using a paper towel. Drizzle with olive oil and season evenly with salt and black pepper on both sides.
