Instructions:

    • Place the bugs in a large dish and brush them on all sides with olive oil.
    • Sprinkle with salt and pepper to ensure they are evenly seasoned.
    • Let them marinate for about 10-15 minutes so the flavours meld.
  3. Grill

    • Preheat your grill to a medium heat.
    • Thread the marinated Moreton Bay bugs onto skewers, shell side down.
    • Place them on the grill and cook for about 4-5 minutes on each side. The bugs should turn a vibrant red and become tender and slightly charred.
