  • 4 barramundi fillets (about 200g each)
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 400g canned diced tomatoes
  • 1/4 cup sliced black olives
  • Fresh parsley, chopped (for garnish)
