Jerk-Spiced Cod with Creamed Corn Delight Recipe
This vibrant dish combines the fiery flavours of jerk seasoning with the creamy sweetness of corn, resulting in a satisfying and balanced meal. The cod fish fillet is perfectly seasoned and baked to flaky perfection, while the creamed corn adds a rich and comforting touch to the plate. Ingredients:
- 4 cod fish fillets (approx. 150g each)
- 2 tbsp jerk seasoning
- 2 tbsp olive oil
- 2 tbsp butter
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 2 cups fresh or frozen corn kernels
- ½ cup thickened cream
- 1 tsp fresh thyme leaves
- Salt, to taste
- Fresh coriander, for garnish
- Lime wedges, to serve
- Steamed rice or green salad, to serve (optional)

1 Prepare the Cod
Preheat the oven to 200°C (180°C fan-forced). Rub the cod fillets generously with jerk seasoning and drizzle with olive oil. Place the fillets on a lined baking tray and bake for 12–15 minutes, or until the fish is cooked through and flakes easily with a fork.

2 Make the Creamed Corn
In a large frying pan, heat the butter over medium heat. Sauté the onion and garlic until softened. Add the corn kernels and cook for 2–3 minutes. Stir in the cream, thyme, and a pinch of salt. Simmer for 5 minutes until the mixture thickens slightly. Mash half of the corn with a fork or immersion blender to achieve a creamy texture while leaving some kernels whole for a satisfying bite.

3 Assemble and Serve
Spoon the warm creamed corn onto plates, place a jerk-spiced cod fillet on top, and garnish with fresh coriander and lime wedges. Serve immediately with steamed rice or a green salad.
