Mediterranean-Style Roasted Snapper with Garlic and Vegetables Recipe

Ingredients:
- 1 whole red snapper (about 1.2 kg), cleaned and scaled
- 200 g cherry tomatoes
- 1 red capsicum, sliced
- 1 zucchini, sliced
- 1 red onion, cut into wedges
- 4 garlic cloves, minced
- 1 lemon, zest and slices
- 3 tbsp olive oil
- 1 tsp dried oregano
- Fresh parsley, chopped
- Salt and pepper to taste
- Lemon wedges, for serving
Instructions:

1 Prepare the vegetables and fish
Preheat the oven to 200°C. In a large baking dish, toss the cherry tomatoes, capsicum, zucchini, and red onion with olive oil, salt, pepper, and oregano. Score the snapper on both sides, rub with olive oil, minced garlic, lemon zest, salt, and pepper, and stuff the cavity with lemon slices and parsley.

2 Roast the snapper and vegetables
Place the seasoned fish on top of the vegetables and roast in the preheated oven for 25-30 minutes or until the fish is cooked through and flakes easily with a fork. The vegetables should be tender and slightly caramelised.

Remove the fish from the oven, drizzle with extra virgin olive oil, and garnish with fresh parsley. Serve the fish and vegetables together on a platter, with lemon wedges on the side.
