Golden Crumbed Orange Roughy is a delightful seafood dish featuring tender fillets of orange roughy coated in a crispy golden crumb. The mild flavour of the fish pairs beautifully with the savoury coating, creating a dish that's both satisfying and elegant, perfect for a family dinner or a special occasion.
Ingredients:
- 4 orange roughy fillets (about 150g each)
- 1 cup breadcrumbs
- 1/4 cup Parmesan cheese, grated
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 eggs, beaten
- 4 tablespoons olive oil
- Lemon wedges, for serving
Instructions:
-
1 Prepare the Coating
In a shallow dish, combine the breadcrumbs, grated Parmesan cheese, finely chopped parsley, garlic powder, salt, and pepper. Mix well.
-
2 Coat the Fish
Dip each orange roughy fillet in the beaten eggs, ensuring it's fully coated. Then press the fillet into the breadcrumb mixture, coating both sides evenly.
-
3 Cook the Fillets
In a large frying pan, heat the olive oil over medium heat. Add the coated fillets and cook for 3-4 minutes on each side, or until the crust is golden and the fish is cooked through.
-
4 Serve
Remove the fillets from the pan and place them on a plate lined with paper towels to drain any excess oil. Serve immediately with lemon wedges on the side for a burst of citrusy freshness.
