Grilled Sardines with Chilli, Garlic & Lemon Zest Recipe
Fire up the barbie for a Mediterranean feast. Grilled sardines, zesty with chilli and lemon, are a flavour-packed delight. Perfect for a quick, healthy meal, this recipe brings a taste of the Mediterranean to your table with a distinctly Aussie twist.
Ingredients:
- 8 fresh sardines, cleaned and gutted
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 red chilli, finely chopped
- Zest of 1 lemon
- Juice of 1 lemon
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
- Lemon wedges, for serving

1 Prepare the Marinade
In a bowl, mix the olive oil, minced garlic, chopped chilli, lemon zest, and lemon juice. Season with salt and pepper. Coat the sardines with the marinade and let them sit for 10 minutes.

Preheat the grill to medium-high. Place the marinated sardines on the grill and cook for 3-4 minutes on each side until they are golden and slightly charred.
