Quick Gyoza Vegetable Soup Recipe

This flavour bomb packs a punch with tender gyozas, vibrant veggies like bok choy, zucchini and spring onions, all swimming in a rich umami broth. It's ready in minutes, leaving you with a warm and satisfied belly – perfect for a fuss-free weeknight dinner.
Ingredients:
- 5 vegetable gyozas
- 2 spring onions, thinly sliced
- 1 pak choi, sliced into chunks
- 20g ginger, finely grated
- 1 garlic clove, minced
- ½ courgette, spiralised
- 500ml vegetable stock
- 1 tbsp soy sauce
- 1 tbsp chilli oil
- Salt & pepper
Instructions:

1 Sauté Aromatics
Heat chilli oil in a saucepan, add the white parts of spring onions, and sauté until fragrant.

2 Add Dumplings and Vegetables
Place frozen vegetable gyozas, sliced pak choi, and spiralised courgette into the pan.

3 Simmer the Soup
Pour in vegetable stock and soy sauce, bring to a simmer, and cook until the vegetables are tender and gyozas are heated through, about 7 minutes.

Enhance with green spring onion slices and a sprinkle of chilli flakes.
